How many charges?
John_Paul_Khoury_17236
So, how many NO2 charges should an iSi siphon take? For a 1qt, 1 pint, or will a particular preparation call for more or less. Is there a tutorial of this on this site?

here's a class they did on whipping siphons in general:

the charge would probably depend on the size your using, and the amount of product in the siphon.

iSi recommend two for the quart size, although I’m sure somebody does something with one charge for something.. the pint uses one and since there’s no way to regulate, the half-pint also uses one by default. I’ve got one of each size (gourmet version) but use the pint the most. I would also recommend using their* charges, as some 2nd party charges have been known to impart ‘off’ flavors.

I remember reading a news story where someone cracked their skull when their siphon exploded. Of course, it wasn't an iSi, but still, I'd follow the manufacturer's directions.
