I see a lot of excellent feedback here VacMaster models (VP200/210/215) are definitely the ones folks keep recommending for reliability and power at a reasonable price if you want something that feels like a step up from consumer gear. The sentiment around “buy once, cry once” is real with chamber vacs they do make a night-and-day difference vs FoodSaver-style sealers for sous vide, liquids, and long-term storage.
One thing I’d add for folks shopping around is that there are other chamber sealers beyond the usual VacMaster/PolyScience/Anova list that deliver good build quality without insane pricing for example, Introvac chamber vacuum sealers like their IVAC-series tabletop units. They come with stainless-steel construction, digital controls, bladder-activated sealing, and adjustable vacuum regulators, which gives you a repeatable, solid vacuum on wet foods, liquids, and marinades (same reasons everyone here is wanting a chamber sealer in the first place).
What some people overlook is that handling liquids and strong vacuums (and being able to compress foods) is where chamber machines really shine over edge-seal units and even having a reliable seal on wet or marinated bags gets much easier with good chamber design.
So if you’re open to alternatives outside the big name brands, something rugged like an Introvac with a decent pump and stainless build is worth a look alongside the VacMaster options being discussed here.
Would be cool to hear if anyone has experience comparing these lesser-known brands to the VacMaster units in real-world use!
