Temp/Timing for 9 pound turkey roulade

Hi I am going to debone a small turkey and stuff with a sichuan inspired ginger wild rice and chestnuts. I was thinking 72C for 3-4 hours then finish in the pellet grill?

Sorry, just saw this. The time will depend on the thickness. Assuming 2.5-3" to core at least 4 hours. Temperature 62-65C depending on if it's primarily dark or white meat (or combo). Dark/comb my bias is 65C
