Hey, does anyone have a good recommendation for carbon steel pans? I'm tired of worrying about the scratches in the coatings of my non-stick cookware, and lugging around the heavy cast-iron skillets with Lodge's BS pre-seasoning.

Carbon steel is not a full replacement for non-stick cookware, especially for things like slow scrambled eggs, melted sugar, and acidic ingredients (where stainless also shines). But they're great to have, even if they're not the end-all, be-all of cookware. (There is no such cookware)
I'm a Darto user, but they've since changed the design of the pans and changed how they finish them so I cannot comment on their current range of products. I prefer the ones I have to the Matfer and DeBuyer carbon steel pans I've used. People seem to like the newer Darto models, though I've heard reports of them coming sticky with seasoning oil/grease. I'm still pretty enthusiastic about the brand and they currently offer free international shipping (which is a substantial discount). Are they "the best ones in the universe?" I wouldn't say that, because there is no such thing.
If I wasn't going Darto, I'd go with Solidteknics US-Ion pans, which feature a similar rivetless one-piece design to the Darto. They're slightly lighter than the Dartos, have a slightly more stylized design, and are made in the USA. They're iron, not steel, but they're indistinguishable from carbon steel pans for all culinary intents and purposes.
If you want to spend way more money than you need to, Blu Skillet are the pans to buy. They're gorgeous and hand forged and require way more labor to produce than other pans. Do they cook any better? I don't know -- I've never used them. I doubt it. But they sure look pretty. If you're interested, act now. They're hard to buy because you have to purchase through a lottery system. Their holiday lottery opens tomorrow, Dec. 6th and closes Monday, Dec. 7th.

you should check out Blanc Creatives. I have several of their carbon steel skillets and they are easily the best workhorse in my kitchen and if you season them well with Crisbee they are essentially non-stick (I use mine to fry eggs as well as anything else).

I like Matfer Bourget black carbon pans. The handle is welded and rivetless.
