Hey all. Some industry friends and I are doing a pop up New years day and just wanted to get some feedback on what you all think of my dish ideas. It's a set menu so I am responsible for dessert and mignardise.
For the dessert I plan on doing a sticky toffee pudding with eggnog ice cream i plan on torching like a creme brulee, kumquat and brown butter powdered sugar.
For mignardise I plan n doing a fizzy champagne jelly (baking soda and powdered sugar) wrapped in an edible wrapper sent out with the bill.
@Chris are you familiar with how long they can be stored before they can no longer be used? I will only be able to do around 10/day and need 75 so I am going to be storing some for over a week.
