So, Im kinda confused, if one sous vides one inch steaks on thursday, do you have to put them back in the water bath on friday or whenever you decide to reheat them? or can you just put them on the grill and reheat? for example, sous vide them to rare then grill later to med-rare?

You do nothing wrong either way. If reheat SV, I would certainly repackage it, otherwise just put it on the grill at 180° C, until the core temperature reaches 51° C . To 90% I go with the later, Grill or pan.

The problem with reheating on the grill from cold is that you will continue to cook the steak, probably defeating the original reason you used sous vide. You could remedy this by under cooking (safely), then grilling, but you would need some experimentation.

So, if your intention is sous vide for insurance (insurance against over cooking), it is better to reheat in sous vide, slightly below the cook temp. Then, sear off on grill to finish. If that is not why you chose sous vide in the first place, maybe it makes more sense to just grill your steak from raw.
