Salmon OK to Eat?

So I was making the salmon chiller appetizer last night and sadly, the seal on one of the salmon bags failed: is the salmon in the open bag safe to eat or simply not worth eating as it may have no flavor?

With that recipe, it's more of a safety issue than a flavor one. That recipe is at such a low temperature (you're cooking well within the microbial "danger zone") it's only fully safe because of the brine step which helps keep pathogens at bay. If your bag failed and water got in, this would pull the brine out of the fish and introduce new bacteria into the bag. It might be okay, but I wouldn't risk it; when in doubt, throw it out. Better to waste a portion or two than end up in the hospital.
