COMPRESSING FOOD

Hi everyone. I've seen people on cookery programmes producing compressed fruit and vegetables, and also compressed AND marinated fruit and vegetables. But I can't find any equipment which does this (at least for domestic use). I assume there is professional catering equipment that can be used for that purpose. Does anyone have any info. on compressing food and on any domestic equipment that can be use for that purpose? I bought a vacuum packer, but it doesn't compress.

You need a chamber vacuum sealer to compress food. Here's the relevant ChefSteps video on vacuum compression.

Vacuum infusion is basically the same technique but with liquid included in the bag. (You don't even really need a bag if the item is submerged in liquid in a container... the effect will be the same.) Perhaps my favorite technique using a chamber vacuum is injecting booze into fruit. Making instant pickles is also fun (though they'll go soggy if you store them for very long).

You can achieve similar results to vacuum infusion with an ISI whipping siphon and Ziplock bags, but due to the size of the canister, you are limited to using small items/batches. The cost of doing this is also much higher; vacuum bags are cheap and running a vacuum cycle is trivially expensive, but using a siphon requires two chargers and this cost can add up quickly if you're trying to do larger volumes. And that'd be tedious as well as expensive. I'll post a link to this technique in a reply to this post because I'm having issues with forum bugs.
