How Long Does Cottage Cheese Last?

As the title indicates, does anyone know how long cottage cheese is good for after it's been out of the fridge?? saw some other people eating their cottage cheese in a late morning class, wondering if it's still fresh..?

Cottage cheese is known by USDA guidelines to have a shelf life of approximately 10 - 14 days. This refers to the time that the product can be consumed after it is initially opened. The "danger zone" is between 40F and 140F. In that zone, food that is not shelf stable becomes increasingly risky. Once out of the refrigerator, cottage cheese will begin to warm. It should be consumed within two hours...over 90F, and you should not leave food here for more than one hour. It becomes increasingly risky after this. This is the temperature range where bacteria and other food pathogens grow best. You should ALWAYS avoid being cavalier about food safety rules for yourself and guests, but especially if you are feeding people who are very young, very old, pregnant, or imuno-compromised. ...and just because "some people" are not getting sick, it doesn't mean you or your guests won't.
