So Turbo can basically cook steaks
erik_icenhour_734310
Other than 1 pork loin recipe in the app, the new Turbo Joule can basically cook steaks quicker and that’s it. Pretty disappointed that this wasn’t made clear before I purchased it.

Yes, just downloaded the app (my Turbo arrives next week), and it looks like 21 steak recipes and 1 recipe for pork tenderloin.
Personally, I don't want recipes, I know how to cook. We'll see how flexible it is once I can test it. Can we use Turbo on any size hunk of meat? I believe so, since they've made comments about chicken and salmon, IIRC (but I might be misremembering).
The big application is not cooking a steak twice as fast. It's the application to roasts. Of course, for certain tough cuts, you may not want to cut the cooking time in half, since that time is what increases the resulting tenderness. But in principle, you can get the tenderness you want, and still cut the time required. I doubt Turbo will tell you how to do that, it's only predicting temperature, so you will have to experiment.
Chicken breasts are already tender, so I imagine it should work for this. Pork chops/loin/tenderloin are also quite tender, so the same applies.
I'm also concerned about how this affects pasteurization tables, which were not designed to account for this (seem my other thread).
The big question is: Can I make cheesecakes in a jar twice as fast lol.

Same, I was disappointed to find out that there is no turbo recipe for chicken or larger roasts. I don't eat a lot of steaks and just sort of assumed that I would be able to "turbo" pretty much any protein but that seems to not be the case.

In principle, the "delta-T" approach will work with anything. The question is if the Turbo algorithm itself can be applied to anything? The original version 3 years ago was only for steak, and only in a certain size pot set up a specific way. I'm not clear on how much it has changed since then. Chris Young said on Reddit that this was within a few months of release when he left the company, and then it just sat, but he doesn't know what may have changed since then.

Hi Erik! We will be adding new proteins and Turbo recipes to the app in the future. A new chicken recipe was added today with more to come. Are there any specific proteins you'd like to see?
