I was hoping for a Breville competitor for the Anova Precision Oven, but they are giving us a steamy air fryer (not sure if available in US yet):

Does Breville think there's not a market for a small combi? Or is it just too difficult to make one (inexpensively) where the electronics don't get steamed out in a year or two? I can't know for certain, but it seems like Electrolux got a lot of warranty claims on the Anova, both for crazing on the reservoir and for electronic failures on various components.
In any event, a steam air fryer looks like maybe it'd be fun to play around with. Commercial kitchens often have powerful convection steamers that make it possible to cook a lot of stuff (usually veg) at once. Having something like that that's also a spacious (looking) air fryer might be useful. But it's big and I don't generally see the appeal of air fryers. I understand that they're trendy, but I never hear chefs or food industry professionals talk about using them (except dismissively). Grafting steam onto an air fryer to differentiate the product might work, but it also might seem confusing and/or desperate to the consumer.
Combi ovens, on the other hand, are a battle tested product category with all kinds of great applications. Putting steam into an oven makes sense. It's not confusing. And there's basically only one consumer product in that space in the US (Anova). If Breville made a reliable combi with accurate temperature/humidity control, adjustable fan speed, a great interface on the front panel (and a great smartphone app that you don't need to operate the unit), and integration with something like the Combustion Inc probe, it would be exactly what everyone has been wanting for the past decade.
But we get this thing instead. Like I said, it could be fun to play around with. If Breville wants to send me one (or anything else for that matter) I'd be happy to put it through its paces. And a Control Freak, if you please. I'd love to see how that stacks up against my Vollrath Mirage Pro.

I moderate a 6000-person combi group. Trust me, steam is confusing to people (not to mention using it for sous vide, without a bag!). It shouldn't be, but it is.
Anova, although I prefer their more scientific approach, haven't done themselves any favors versus the other home combi ovens that take the pre-programmed approach (which I hate). Most people don't what to know what and why or have to think, they want to push a button and eat.
