Timing w/Joule Turbo vs. Joule
schragerorder
Hi,
If I'm using an older recipe formulated for regular sous vide, do I need to adjust time with Joule Turbo? I'm cooking Chashu pork belly at 146F. My recipe calls for 36-40 hours.

No. It is the same.

The "Turbo" capability to speed up sous vide time only applies when you use specific recipes in the app. All other recipes, and sous vide cooking in general, does not take advantage of the "Turbo" function.
Turbo is essentially an algorithm that predicts cooking time when doing delta-T sous vide, where you raise the temperature of the bath higher then the final desired core temperature. For Turbo to work, certain parameters must be limited (what you are cooking, cooking vessel) or the prediction will not work. However, you can do delta-T cooking on anything, just stick a probe in the food, set the bath temp 5-10°F higher, and pull the food when the core temp is reached.

Thanks for the tip! I appreciate the suggestion.

Joule Turbo fo r sous vide, the cooking time for your Chashu pork belly should remain similar to the original recipe. The Joule Turbo heats up faster, but the cooking time is primarily determined by the thickness and texture of the meat. For pork belly at 146°F, 36-40 hours should still work well. Just monitor texture for doneness!

Joule Turbo is designed to speed up cooking by optimizing heat transfer. However, for traditional texture and flavor, sticking close to the original timing is fine. You can reduce time, but test for tenderness before stopping early. Preparing my college application was overwhelming, so I decided to buy admission essay from experts who understand the process.
