Pork butt bacon.

This turned out great.
Butterflied pork butt so I could get the bone out, cured with
5g pink salt, 95g Kosher salt, black pepper and cloves.
7 day cure, flipped daily and finished in the oven as my

Bradley? Back in Indiana I smoked in 10 degree weather with mine by wrapping it in a heavy blanket. Just leave exhaust clear. Worked great.

I was looking around on the meat smokers forum and this slid by, I got it very cheaply as the other half of the carnitas I made earlier, it is just butterflied and flattened, very nice texture and flavor.
It inspired me to hang a country ham this week too, should give me nice meat for the weekend.
I saw Appleton, WI - that is funny, I used to live in Menasha, WI.

Amazing I would eat that for breakfast everyday! I love bacon (I am putting it some how into every course of tonights dinner!)

Thanks! The bacon is very simple to do, spice and quite a bit cheaper if you have a handy asian or mexi-mart or butcher where you can get large cheap cuts.
