whipping siphon question

First let me say that I loved the course on the whipping siphon. One question if I may.
I have a cup of creme fraiche flavored with herbs and wasaby that will be dolloped on some corn blinis and smoked salmon. I was wondering if this mixture would work in a whipping siphon..to give it a different texture (a bit more firm). I have both a one liter and a half liter ISI.

Thank you for such a quick reply. I was worried that it may be just to dense to accept the gas.
I added the xanthan gum as you suggested, used the .5L siphon, cleared the air with 2 cartridges and pressurized with 2 more.
Perfect results.
