Meat Grinder and Meat Slicer

Any reccomendations on a heavy duty meat grinder that can be used at home, and also, applied professionally outside of the home when needed? Also looking for a great meat slicer that can be applied at home as well as professionally. Looking for one that is low maintenance and stainless steel whenever possible. Also not looking to break the bank, but willing to splurge if necessary.

I was looking at hobart, but they are ~10k and is definitely outside of my budget. Looking to spend around 2K +/- 2K all together.

How much meat will you be grinding at a time?

Anywhere between 2-20 people.

I have no experience with slicers, so I'm not sure which size blade I would need. I'll assume that the larger the radius of the blade, the easier and thinner the slices you'll be able to achieve. I guess the largest size possible blade without looking like I'm lugging around unnecessary heavy equipment.

The LEM #12 grinder is pretty good.

I'd definitely stick with the size #12 or larger (although you shouldn't need larger) because in my experience smaller grinder barrels and augers can lead to more friction...which leads to more fat smear and that's something you definitely want to avoid with ground meat...especially sausage.

As to a slicer.....I recommend going with a Hobart....they have several different lines of slicer...including an inexpensive line....I've seen some models a start at $1,500 new.

I recommend talking to Hobart in order to determine what slicer will best fit your needs....you may not need one that's super powerful and large if your not slicing something like big chunks of cheese (which are a big strain on the slicer) on a regular basis.

I wouldn't overlook a used Hobart....years ago I bought a used Hobart automatic for $600 and paid Hobart $600 to give it a tune-up....that turned out to be a very good deal....the comparable slicer model sells for about $7,000.00 or so today.
