Infused Rum

Looking to make a watermelon mojito using mint infused rum, watermelon juice, and a piece of carbonated watermelon as garnish.

Whats the best way to infuse the mint into the rum and keep the color of the mint? I was thinking either using my siphon or sous vide but I'm not sure what temperature. Any suggestions?

A quick blanch of the mint (boiling water then into ice bath) will help set the color. Then the siphon would be my weapon of choice, you'll have to play around with how strong you want the infusion. I haven't used mint myself but I have used basil and a little goes a long way. I used probably 6-7 leaves and then once the canister is pressurized it's a matter of timing. It doesn't take long to overdo it so I'd start with like 60-90 seconds and then taste it and you can always repeat it to strengthen it.

Any liquid nitrogen? If so pour it on, grind herbs to a fine powder, then immediately pour rum over it. Cold temperature deactivates the PPO enzyme that makes herbs go brown, then the alcohol kills it.

I would infuse the rum, strain it, and just use fresh mint for the cocktail.

Change of plans. Cant get my hands on enough charges for the weekend so I am going to do the following

750 ml of Silver Rum

60g fresh mint

blanch mint for 10 seconds, ice down

place rum and mint in ziploc bag and hold in water bath set to 168 F (75C) for 2 hours

chill

This was 750 ml of Silver bacardi rum with 8g of fresh mint

Mint blanched in boiling water for 15 seconds, then iced bath

Put in bag with rum

158 degrees Fahrenheit for 45 minutes

I have no idea why this posted upside down but this was as follows

1L rum, 8g mint

mint blanched as in step before

cooked 158F for 1 hour 30 minutes

this second batch had little collor difference but huge flavor impact

and this was the final drink! That is a piece of carbonated watermelon and mint leaf for garnish. This was not your average college party!

Spice grinder might do you some help, which will quickly make you the mints powder with the original color.
