These sorts of composed salads -- ones with a billion ingredients -- always seem sort of silly to me. I'm sure it's delicious though. The plating reminded me of some salads I've seen from Michel Bras, and I wasn't surprised to find out that Hajime Yoneda worked for Bras in Japan. I found

I did a take on the Bras gargouillou once for one of the challenges here and I found it to be a very helpful exercise because I normally don't deal with so many different vegetables so deciding on how to prepare them, cook them, sauce them, and then plate them was pretty fun.

for two. From the artistic point of view; an island, coral riff scenic. Like it.
