These sorts of composed salads -- ones with a billion ingredients -- always seem sort of silly to me. I'm sure it's delicious though. The plating reminded me of some salads I've seen from Michel Bras, and I wasn't surprised to find out that Hajime Yoneda worked for Bras in Japan. I found an article about this dish in the WSJ which provides a bit of background to what you're seeing in this video.

I did a take on the Bras gargouillou once for one of the challenges here and I found it to be a very helpful exercise because I normally don't deal with so many different vegetables so deciding on how to prepare them, cook them, sauce them, and then plate them was pretty fun.
