Sous Vide Supreme to Polyscience Professional

Just bought the Polyscience from ChefSteps as a replacement for my Sous Vide Supreme, which I'm giving to a friend who just got Modernist Cuisine at Home for Christmas. Should I expect any differences in process? Will food reach temp faster due to better circulation? Anything else I might need to know in making the transition? Thanks in advance!

You'll see slightly faster heat up and recovery of cooking temperature. Other than that I think the Sous Vide Supreme is a good product, although less flexible than a PolyScience unit. No other change to the cooking process required.

Thanks Chris. If I'm vacuum sealing my meat (doing the 72-hour braised short ribs at the moment), is it okay if they're just sitting on the bottom of the container being held down by a weight? (there was a tiny bit of air that kept part of one of the bags floating to the top). I note that you guys often use ziplock bags clipped to the side, but that doesn't really work for vacuum sealed bags unless there's a lot of extra room in them. Still adapting to the new immersion circulator. I *do* like being able to see what's going on, although my partner is not thrilled with the noise the PolyScience makes, much as she loves the ability to put it away easily when not in use.

Tuck — Weighted down will be fine. You may some slight discoloration of the surface of the short rib where the air pockets have been trapped. But it shouldn't present any problem.

Hey Chris- having difficulty adjusting temperature and changing from Celcius to Farenheit on a couple of the circulators that we have here in CHarlotte. Any magic tricks, or a secret rest button you might know about?

Hmmm, haven't had that problem. Let me ask the kitchen crew if they've seen this problem.

- Maybe this is too basic an answer, but on the polscience creative unit, you can only change temp and units when the pump and heater are not running. I'm not sure why this is, unless to prevent accidental changes while it's going. You can stop it briefly, adjust and restart with no adverse effects though. I'm not sure about other models.
