Vacuum Sealer options

I know you have recommended the Vacmaster VP112. I want to get started on experimenting with some of the sous vide techniques on this site. I do have a FoodSaver vacuum sealer already. Is this machine inadequate for sous vide? Are using some of the "improvised" methods on the site a better way than using the FoodSaver?

If your going to be packaging with liquid I would recommend using the improvised ziplock bag method but otherwise a food saver will do fine for items with very little or no liquid. That's what I started out with but I find the chamber vac indispensable now.

I would use your food saver because it's FREE! Like Brendan said use ziplocks for liquids but if you are just starting out there is no reason you cannot get good results with the equipment you have. Then if you are hooked maybe upgrade to a chamber vac.
I also agree that my chamber vac is indispensable but that's a large investment.

I am wondering if you have any other suggestions for vacuum sealers, as much as I understand the Vacmaster is the Mercedes of them all, I am just getting started with Sous Vide cooking and am not quite ready to put out 1200, so would appreciate any suggestions in the mean time. I am looking for something that is just for home use.

Anything really - the sad thing is that the vacmaster is the lower end of the "affordable" spectrum for vacuum chambers, ziploc, foodsaver, Weston all work.

I would also suggest sticking with Ziplock-style bags for now. Edge-sealing devices aren't something we really recommend. I am aware of several efforts to make chamber sealers more affordable that will be coming to market later this year. Until then, I would save your money.

Thanks Chris and Johan, my thoughts were as you said Chris to just stick with the Ziploc method as I venture into Sous Vide, I look forward to seeing more affordable equipment, as a home cook, I have held off for quite some time just due to the cost factor.

use ziplocks with the displacement method and save your money to buy awesome food to sous vide! What's your current water bath setup?

Kabel - I would wait, I do believe there are better options coming available soon. I think you will be happy you did. Give it a couple months.

There are some new sealers coming to market, but I think they're going to be late to market and miss their target price point.

-- I have their estimate specs for the PolyScience VSCH-300AC1B. It is supposedly $999.95 with a chamber size of 13.8 x 12 x 4.3in. Supposedly, we will get one of the first production units to evaluate. We'll let you know what we think.
Also coming out soon is the Minipack Cube. It will likely be a few more months. I do not have any initial specs on it but supposedly it is a great design. I will keep you in the loop.
