I know you have recommended the Vacmaster VP112. I want to get started on experimenting with some of the sous vide techniques on this site. I do have a FoodSaver vacuum sealer already. Is this machine inadequate for sous vide? Are using some of the "improvised" methods on the site a better way than using the FoodSaver?

Dear everybody

After 6 years of cooking sous vide and learning all other advantages of a vacuum sealer - even with my old simple machine - I wanted to take the next step towards a decently priced chamber-vacuum-sealer.

I finally found a high quality machine at ERME - a family owned Company in Sitzerland that produces high end vacuum-sealers. Here in Switzerland you see their machines in basically every food store you walk in and they are well known for perfect quality and service.

I bought their model "Prive" and would not want to live without it anymore. So if anybody lives in europe and is looking for a cool and stylish product. This is what you should aim for.

This is how cool a vacuum sealer can look like - btw. I got a green one ;-)

@Ren -- In terms of quality and our endorsement, ChefSteps still has not received a PS 300 Series to test out, so we have no opinion of them yet. Regarding launch date, last week we heard they would be available December 2nd, so they are likely doing pre-launch sales right now. We'll let you know what we think as soon as we get one.

@Brian_Douglas -- Minipack Cube does exist and is several months out still.

@Edward Any prelim word on the Polyscience 300 since they appear to be on sale now?

It is a very heavy machine, I've had mine for quite a while now, far more than 12 months.

My guess is if it "froze", pull the plug and re-insert it, vacuum is released.

You need to change the oil, it is a mechanical device, same as any engine oil.

It'll either go nasty from lack of use or from use, period, clean, change, wipe off.

Best appliance I ever bought.

I'm in the process of selling a piece of real estate and thought that once the deal is done I'd seriously consider getting a chamber sealer.

I had pretty much decided on the VP215 until I read several of the reviews around the 'net.

Overall the reviews are pretty good, but one particular review concerns me:

The Polyscience 300 unit is now on their site. Taking orders for the holidays. Anyone get their hands on one yet? I'd like to see a comparison (specs, pros-cons) between that, the Vacmaster 215 and the Minipack cube (if it even really exists).

@Josep and @Jack_Mayer -- I have their estimate specs for the PolyScience VSCH-300AC1B. It is supposedly $999.95 with a chamber size of 13.8 x 12 x 4.3in. Supposedly, we will get one of the first production units to evaluate. We'll let you know what we think.

Also coming out soon is the Minipack Cube. It will likely be a few more months. I do not have any initial specs on it but supposedly it is a great design. I will keep you in the loop.

I've been on the fence about whether to get a VacMaster VP215 or wait until later this year for whatever @Chris is referencing to become available. Anyone in the same boat?
