Emulsion confusion

I've been reading about emulsion for quite some time and finding a hard time to understand it. That is regarding oil in water emulsion(mayonnaise) and water in oil emulsion( butter). I understand most of the stuff we used in the kitchen is a form of emulsion, how can I differentiate in which categories they belong to? Is there any simplest form of explanation? Thank you guys for me.
