Yes, I am asking. I know towels won't make me a better cook, but as someone who doesn't a lot of kitchen towels I was wondering what would be recommended. I thought the ones that soak up moisture aren't good because then if you use them to take something hot out of the oven the heat will transfer right through the wet towel to your hand. But then how else would you soak things up? Have two different kinds of towels?
I'm also asking because I hope to purchase a Konosuke HD2 in the next month or so and I know that it is important to wipe it off shortly after using it and was wondering if there truly is a recommended kind of all around towel for that purpose.
That's it, I'm done asking the most ridiculous question I've ever asked. Next I guess I'd have to ask what kind of socks people where as that is probably the next thing I need to be a better cook!

Bar mops
are what I've always used.
They're inexpensive, effective and reasonably durable.

The cheapest all cotton hand towels from my local restaurant supply store are what I use.
Remember hand towels are for picking hot things up with. That said they will get used to wipe things down, clean etc, but when they get damp do not use them to touch hot things - your first steam burn will remind you of this.
Buy the towels in bulk and don't expect them to last for ever. Sharp knives, flames and constant washing give them a short life.
For spills I use paper towel and chux style cloths.
For socks, cheap sport ankle socks enclosed in Dansko open backed clogs work for me. Anyone who cooks for a living quickly learns comfortable footwear (along with posture and kitchen fitness) are more important then what knife you use.

I just use the cheapie towels from Ikea. They're like $0.80 a piece or something.

Buy a lot of cheap ones. Wash them frequently. They get super unhygienic really easily.

Lint free surgical towels. Typically found on Amazon under the Automotive heading, but these are outstanding for kitchen use. Wash them frequently, they can take a beating.

I bought these to use as disposable napkins for a BBQ, but they were too nice to throw out.

They were in the cleaning section
I like them better than the bar towels I grew up on, they wipe up better, but they don't wring out as well
So I just have more sitting around and throw them in the laundry sooner

I second the surgical towels- cheap, great texture, more durable than bar rags, and they don't deposit lint or get stringy with regular washing.

I like using one color for food/oven mit use, and another, darker color just for cleaning.
But back to your knife wiping and pulling something out of the oven example...have one towel next to your board for knife use and a second dry towel to pull things out of the oven....plus a small stack of dry, folded backups just in case you're not sure what's wet and what isn't! Better to grab a towel or two that you know for sure is dry and clean than guess wrong and have to learn from the mistake.
Never use a wet towel to touch something hot.

I'd assume the knife wiping towel needs to be pretty absorbent. I have some towels that I guess are in the hot pots and pulling things out of the oven category as they are not very absorbent. Are surgical towels absorbent?
