Why do you clean off the kombu? I don't know a lot about it, but I thought that the surface had a lot of glutamates that contribute to the flavor of the broth?

- I had the same question. I've heard that you should rinse or wipe down kombu to maintain clarity of the dashi broth, and I've heard that you don't need to and don't want to.

Many Japanese cookbooks instruct you to wipe the dirt off the surface of kombu with a tightly wrung out kitchen towel. The truth is, this really isn’t necessary in most cases these days, since the kombu we get has already been cleaned very well. If you happen to get a batch with some gritty stuff on the surface you’ll need to wipe it off, but make sure you’re not getting rid of that powdery white stuff in the meantime.

this may sound a little bit stupid but, can you buy on internet kombu and bonito flakes ?
I live in the extreme north of norway (check svalbard on google) and, lets say is kinda "difficult" to get those ingredients here in the local shops.

I have friend they buy some stuff at amazon but i dont know where to buy in norway.
But for sure there are plenty of places.
