Anyone mess around with gels at all? What are some good ways to make some? I had an idea to do a vinaigrette gel that has a little more coating ability and mouthfeel.
I had some guar gum and xantham lying around. The guar seemed to work at making a good consistency.
I would like to do a 3-1 oil to nice balsamic or saba or something so it contrasts and creates a sort of suspended cosmos. Bubbles of Dark Vinegar suspended in an olive oil flavored jelly.
(sort of like the loose emulsion in the salad below)
for now I made CHIVE BLOSSOM GEL

Heres the Chive Blossom Gel.
(Its acidic because I made from Chive Blossom Vinegar)
