In Need of Vegan Help

Does anyone have any recommendations for good vegan cookbooks?
I'm cooking for a family where one is a vegan, the other two eat everything except beef/pork, and they all want low sodium. The vegan is not a Level 5, he occasionally eats seafood and will accept small amounts of dairy.
My problem is a large number of the vegetarian recipes I have use dairy and/or eggs. I'm also trying to get away from the rice/beans/pasta rotation.
Any recommendations for Caribbean cookbooks would also help me.

Veganomicon has lots of flavorful recipes. My only gripe is that it's text-heavy and light on pictures. That's not really a big deal for this type of cooking, but it's nice to have a visual representation of what the final product will look like. But it's not like cooking from The French Laundry or Alinea cookbooks, where presentation really matters and you want to have everything look exactly as it should).

Not Vegan, but have you checked out Eddie Sheppard's Modernist Vegetarian books? I recomend all modernist chefs check these out, reguardless of the Vegitarian content.

Yep, Eddie does a great job! The Plenty cookbook is also great, as is the non-veg followup, Jerusalem (and it has plenty of veg ideas too.)
