I followed a recipe for French scrambled eggs which call for blending the ingredients with an immersion blender, cooking it sous vide, blending it again to remove the chunks, and then putting it in the siphon with two no2 cartridges.
I'm pretty sure I followed the steps correctly and am thinking it's possible that I incorrectly used the siphon (this was my first time using it).
I poured the eggs into the siphon, and then followed the instructions from the Chef Steps whipping siphon class for charging a siphon.
When I went to disperse the eggs, it was just a watery egg that dripped out, and not even all of it. I couldn't get more to come out. So I just opened the siphon and dumped it out and it was just a watery mess. What did I do wrong?
