With such a small capacity and the significantly longer spin times it seems like a hassle to me, but the only things I see recipes for using a centrifuge are the famed "pea butter" and clarifying juices. I feel like there are several other options for clarifying. What else do you use a centrifuge for?

I wouldn't really bother with that unless your more interested in just playing around for fun. The yield is so small that it would become one of those things that is used to test out a theory and then sit on a shelf because it's not practical. If your really interested in it I would keep an eye out for lab auctions or cruise ebay but make sure you find out what it was used for before you buy it.

I agree with the size issue, it's just not practical at that price point.

. I absolutely love having a centrifuge, and our kitchen couldn't function without it. It saves labor and let's us do things that would otherwise be impossible. But I can say, after 10 years of using them in kitchens, that there is no point to having one that does much less than a liter at a time. Speed is less critical, even a relatively slow one that will only do something like 2000 x Gs is fine for many uses. Maximum volume is everything.

Hmmm 28 thousand dollars.... maybe a fun machining DIY someday....

The work to extract product out and clean the tubes paired with the limited volume it produces is definitely a deal breaker. I hope someone comes out with a good DIY because I'd certainly be willing to invest a couple hundred to build one.
