cheesecloth source?
tshewman
Back from trips and it was a chicken, beef and veal stock weekend. Any recommended sources for cheescloth (or alternative suggestions)? I go through allot of that stuff even when pressure cooking (I have a 24 Qt stock pot I rarely use since I purchased my KR).

Considered a superbag before?

At restaurant supply stores you can buy big rolls of it.
As an alternative sieves work. Use food grade tubing to syphon the stock from the pressure cooker through a sieve or two.
It depends how you are going to use the stock. If it will be used as a consume then I use the above method. For sauces, strain out the big chunks and I don't care if it is cloudy (still make clearer than old school stock methods).

@Brendan
, considered Superbags, but wasn't sure which one (microns) and if so, is it worth the price? Sees expensive.

- Thanks! For some reason I constantly forget supply stores. I currently use a chinois (~$100) and ut the cheesecloth over top. The problem I have with just letting it slide now is there is no set use for the stocks when I make them. Chicken is often used for soups, sauces, risottos, quinoa and the like. Beef, soups or sauce, lamb are usually sauces, veal, as my mother stock if you will. so I usually try to make a relatively clear stock from the get go (perhaps I think too much).

Most fabric shops have unbleached reusable 100% cotton muslin....it's cheap (~$1 a square yard) and it lasts a very long time.
I use it to make cloth sausage casings or hem it for straining.
I bought the last batch from Hobby Lobby.

Quick update. Stock Sunday and early Monday am (Veggie, Pork, Lamb, Beef, Veal, and crustacean-love my PC!). Purchased some cheesecloth online and
after each use, I boiled it and then threw it in the washing machine with some baking soda and detergent inside a zippered mesh bag so it would not tear. Left it in the same bag while it went in the dryer. Threw it in boiling water just before using to sterilize it (have to use it wet anyway) . Worked VERY well. Saved a fair bit of money after just one round of stocks with minimal "upkeep". Just FYI.
