Wylie Dufresne's Eggs Benedict, where to find plastic tubes for yoke?

I was watching season 1 of Mind of Chef and found Dufresne's recipe accessible and worth trying. However, to water bathe egg yolks so that they'll form into gnocchi-like pieces, he used what looked to be a flavor-ice-like tube that he submerged sous-vide. Does anyone know where these can be purchased?

We used synthetic sausage casings for an unrelated sous vide egg application,

In MC they suggest making a sleeve out of a vacuumbag and tie it at the ent to make a cylinder. Also i'd imagine you might be able to put an aluminum foil ball in it to get a cylindrical shape. Haven't tried any of these though. If you try the latter it's propably a good idea to wrap the aluminumball in clingfilm first. not sure what if anything the aluminum might do to the egg-yolk.

I just gave it a quick try and it worked out quite well.
I used a piece off vacuum roll, but it could be done with a bag as well.
I seald both sides, leaving a ~ 2cm gap and then cut of one side to make a sleeve. I rolled an a ball out of alumin foil to fit and wrapped it in clingfilm. I then pushed it into the sleeve with the back of an wooden spoon. Filled in the eggyolk and sealed the bag without trying to pull a vacuum, i don't have a chamber vakuum. I then pinched the end without teh aluminball and twisted it to get a more cylindrical shape and secured it with a freezer bag clip or whatever those are called in english ( the pink thingy in the picture). You'll have to trim the ends, but all in all i'd say it work pretty well. Another idea might be to skip the aluminball and tie both ends like a candywrapper.

this looks great....has anyone tried bonding an egg yolk (like Harms) to a meat protein? I have made "pastrami sandwiches" using meat glue with scallops and the pastrami glued in the middle of the scallops. Now I want a "bacon and egg sandwich" served with the Soubise fluid gel. Any thoughts on if the egg will bond? by the way if you need the color purple onion works well for the fluid gell

I staged there a few years ago, we made sleeves out of vacuum bags for the yolks. Can't remember the exact dimensions though. it does have to be tied incredibly tight to get the proper cylindrical shape.
