Need advice on smoking a beef brisket
Peggy_Ryker_15788
Have an electric smoker. Easily can set the temp. Add water and add chips. Have a beautiful rub recipe. I have used an inexpensive Brinkman in the past and made a beautiful brisket. Saw a pro on youtube who wrapped his brisket after four hours. Would like a person experienced in using an electric smoker. I did an hour and a half a pound at 250.
Any advice or recipe would be appreciated.

He has 4 or 5 videos that show the whole process. I followed this with great success my very first time in a big green egg.

The key is the paper wrap as opposed to foil. It allows the bark to retain it's positive properties and some smoke to still soak in.
