The Tailgate Party Thread

Don't know what it is like where you are, but here in the US, the tail gate party, at the ball park, is a big deal. For the last two years, I've been in charge of the main protein for a group of about 20. Two years ago it was pulled pork. Last year, I circulated burgers and bratwurst at home and flashed them off on a small grill at the ball park. This year, the Philadelphia Phillies are pretty bad. I need some new ideas for the tailgate party to keep morale up heading into the park. What have you got? Interesting preparations for the tailgate party anyone?

I'd think some 72hr baby back ribs or even a tritip would be good. Although I wonder what the guys at ChefSteps think of time/temp for Tritip. Also a cooking liquid or rub to use for it?

What about wings? I don't know how you feel about frying at the tailgate, but if you've never had the Pok Pok Fish sauce wings, they are a thing to behold.
I've made them the traditional way before and it is pretty epic, I imagine you could use either the CS or MC methods and just finish them in the sauce.
This is the recipe, but it's missing the chili component that they add (which is the best part). Basically blacken *dried* thai chillis in a pan with minimal oil over low-med heat. Blend into a paste, and whatever you do, don't put your nose over the food processor, *ahem*.
Super tasty, super fun. Also, it says "asian" fish sauce, but in the book it really stresses getting vietnamese fish sauce.
