Chamber Sealers???

First off, love the site!!! I already have a sous vide professional circulator and absolutely love it. I am researching chamber sealers a lot. What do you use in the chef step kitchen?

My guess is you don't want to pay that much. If you are looking for a good home unit try the vacmaster VP215 or VP210, I know a lot of happy owners, including myself. Try www.qualitymatters.com they had great customer service, I know others here will vouch for them as well, yet none of us are affiliated.

I didn't want to discourage the thread but it seems like it is getting a lot of views, if you can get ahold of a really nice chamber with pressure release, multiple seal bars and whatnot else, by all means go for it, the vacmasters are kinda the only thing out there affordable and I know several chefs that see the 215 as their holy grail for regular restaurants.

Thanks for your responses. I am willing to shell out the cash for a nice machine. I really want something with a busch pump. I am currently looking at the Minipack MVS 35X. I am a professional chef and this may be something I use in our kitchen. Thanks!!

Would the VP215 work in a lower volume restaurant? Is it great for liq seals? With its what is the optimal amount of protien to pack at a time?

OK...So I am also in the market for a chamber vacuum sealer. The problem with VacMaster 210 is that you can NOT fit jars into the thing.
Im looking for something that is easy to use, functions reliably, and ultimately something ill be happy with in the long run. Any suggestions?

? I can fit the regular ball mason jars in my VP112 just fine and i'm almost positive the 210 is a little taller (not by much) than mine.

Im looking for one that can fit a jar approximately the size of which pickled cucumber spears can stand vertically in a jar. Somewhere near 24fl oz.

Mainly for the convenience of not having to transfer the "laying down in a bag" to a glass jar later, as well as not having to waste a bag in the process.
There's just something about assorted pickles coming from a glass jar from start to finish.

I usually buy a 1-2k pack each time. They are nothing price wise compared to Food Saver rolls, not to mention easier to store.

Well if the jar thing is a make or break item your going to have to sort by chamber size and then pick your price after that.
The vacmaster vp320c has a 7inch chamber which would probably fit your jars but it's like $1800.

I have the VP112. My wife wouldn't let me get anything bigger. It does the job for me so far in the home setting so i'm happy with it.

. Sheet trays hold the bags, parchment paper, foil, plastic wrap etc. It is easy to move around the house and you don't lose counter space.

I have no idea if the Vollrath justifies the extra price, on the MiniVac you seem to have a lot more program options.

The pump is the most important thing to look for in my opinion. Busch pumps are kinda the cadillac of pumps. They will last the longest. I you are willing to shell out that kind of money I would look into a Minipack or a multivac. I recently put a down payment on a minipack mvs 45. It retails for around 4200 but they happen to have a demo unit that was used at 1 show which I was at and they only cycled it about 10 times. I got it for about 3500. Any questions just ask!! Oh and I'm not sure what vollraths have for a pump, I've been meaning to look in to this.
