The confectioner from Kaizen Yoshifusa in Kyoto is visiting the US this week to prepare Kyoto style wagashi (tea sweets.)
We had the Kuzukiri - chewy kuzu noodles served on ice, with a black sugar dipping sauce. Tasted pretty much like thinned out molasses. Paired with a very roasted tea, Hojicha brewed to order.
