ISI Canister Help - what did I do wrong?

I used my new 1L Profi ISI Canister over the weekend for the first time to make a basil cream to pipe over tomato soup. It seemed like there was plenty leftover so I put the Canister in the fridge to enjoy the next day.
When I took it out the next day, nothing would dispense, I let it sit on the counter for a few minutes, gave it a shake, and tried again. One big burst of basil cream exploded out. But after that, nothing else. I couldn't hear anything when I shook it so I figured it was empty. Following the safety instructions I read in MCAH I held the trigger down in the upright position to expel any additional gas. After that was done, no noises could be heard when pressing the trigger. I unscrewed the cap to find the canister was still nearly full of whipped cream. I scooped it out into a jar to save for later but I'm wondering if I went wrong somewhere. Is it common to have over half your cream stuck in the canister? Should I have not put it in the fridge overnight? Should I have added an additional charge (it was originally charged with 2 cartridges).

Thank you! I am a little obsessed. I spent all day yesterday going through all of the course material you have up so far and then recommending it to my friends. The only thing that got my hungover ass off my couch yesterday was watching the Pork Cheek recipe and remembering I had a celery root in my fridge!

There was actually gelatin in it so this definitely sounds like what happened.... and explains why when we left it outside in the cold to chill and brought it back in, it didn't dispense anything until we warmed it up a bit. I figured since my fridge wasn't as cold as outside I wouldn't want to warm it up again but if it's gelatinized, I would. And yes, completely upside down.

— It sounds like your cream solidified in the canister. Was it just cream, or did you have some gelatin in the recipe? If there is still liquid in the siphon (you can tell by its heft) and only gas is coming out, this is the telltale sign that whatever is in the canister has set into a solid. It needs to be able to flow to come out.
Very often I have to shake a canister very, very hard if it's been in the refrigerator all night to break up the solid. If gelatin has been added, I usually need to warm the canister slightly to melt the contents slightly.
Finally, you are holding the canister entirely upside down when try to get liquid to come out, correct?
