I just picked up a couple of these, they're pretty solid so far and come with some texture on the handles in two different spots. I believe they come in 9" and 11" lengths as well.

Having never worked in a professional restaurant, I'm a bit unclear: what exactly makes a spoon "great" for saucing or plating?
Brendan_Lee_56950
weight, length, bowl shape, and bowl capacity

Never used them but from what I heard.Good length, good bowl size and shape. There was also bragging right of owning a Kunz spoon at the time of Lespinasse.

tasting.
i dont know any spoons that are more than 8-10 dollars. even the kunz i got was around there.
