Anyone have any recommendations for torching steaks post-sous vide? Searing is smoking the house every time despite the fan and I don't feel like firing the grill up for a quick sear. People seem to like the Benzomatic products but some first-hand experience would be awesome.

Benzomatic (or any mapp) works well. As far as I know, searzall still is not released. :-( This is not uncommon in manufacturing (Been through it many times in med device too), so hopefully not too much longer.

Don't worry you'll need the benzo for the Searzall... ;-)

The Benzo will smoke fill the house as well, high heat and fat / moisture kinda achieves that effect.

Every single protein I have posted here is seared with a Bernzomatic ts8000, you need that or the 4000

for the searzall anywho.

I like the Iwatani butane torch. Nice big flame and the fuel is dirt cheap.

Butane torch are cooler and unfortunately the Searzall doesn't fit the Iwatani. (The igniter melt!)

So while we're on it, lets talk torching techniques.

How do you prevent excessive charring? Oil coating? Fast movement? Slow movement?

One of the things I like about the Iwatani is the large size of the flame. I admittedly do not have first hand experience with the benzomatic, but it looks like a hotter, but smaller flame. Is this true?

Isn't much of a technique you have all the visual cues - so sure it is faster since it burns magnitudes hotter, a little oil often helps - you can't really compare the two any more than you can an electric home stove to a commercial range.

Seems like the thought here is bernzomatic ts8000 is the way to go since it provides a lot of heat. But since the current thinking is that torch taste comes from too hot of temperatures, wouldn't a more moderate temp torch be preferable for searing?

I'm pretty sure everyone in this thread recommending the ts8000 is also eagerly awaiting the searzall. The ease of use for the head on that model is what makes it worth it's weight in gold though, I like to just hold it further away from the product, it may take a bit longer but we're talking maybe another 30-40 seconds so not life changing time difference

I'm brand new to torching, but had no problem avoiding smoke while searing my first steaks with a TS8000. I don't think it's any faster than hot cast iron, especially since you can only do 1 steak at a time, but it cuts WAY down on the "gunk up the kitchen and annoy the guests" factor.

I did end up with some torch taste in a few spots, probably from getting too aggressive (trying to turn the fatty end of a ribeye into a crunchy crust). Until my Searzall arrives, any other tips?

I've decided to hold off until I can get a sense of what people think. $95 (including shipping) was steep too, considering the TS8000 runs $133 here in Australia.

I'd just look for something similar to it, it doesn't have to be the exact brand, I think Chris had some different recommendation for the UK.

Dave Arnold will go to the UK in the fall for his new book launch and he's supposed to check the torchs available there. If you want to look yourself you should have a torch between 7000 and 14000BTU, A combination trigger gas valve and ignition, A nozzle diameter between 0.625 inches (15.9mm) and 0.610 inches (15.5mm) at the point of clamping OR between 0.872 inches (22.15mm) and 0.856 inches (21.75mm) at point of clamping, a minimum clampable nozzle length measured from end of nozzle of 1.73 inches (44mm) and operate properly at an angle that places the Searzall screen parallel to a horizontal surface.
