Beef Jerky recipe

Hey Chef Steps Team
I am heading to Peru in a couple months and would like to make some killer beef jerky to bring with. Do you have a recipe you like or any tips? I'm sure I can do some research and figure it out, but I thought I'd ask the pro's.

As an "ex" South African now living in Australia, I could not pass this post without commenting! The best "jerky" is made by South Africans and we call it "biltong". Google that and try it. Its the most common snack there and every South African always has a supply in the house. There are hundreds of places to find out more - here's one to try:

Jerky, I was told, originally came from a native Peruvian Word. Had some very tasty llama and alpaca Jerky when travelling! Try it out!

Check to see if you're ALLOWED to bring in any meat products first. They
confiscated my store bought jerky when I landed in New Zealand! AND the package said
one of the "country of origin" was New Zealand! I hope those customs
people enjoyed it ;-(
As for jerky- I personally like spicy 5-spice Chinese jerky: easy on the teeth and jaws, unlike many "dry, hard jerky".
