hi, I would like to make some octopus sausage; but i understand that squid/octopus protein behaves differently from other seafood and meat proteins? thus, I would like to find out if I can jus use a standard sausage recipe and subb the meat with octopus that it will work?
(2% salt, puree/blend everything;keep cold;poach/steam).
