Peach Halves ??

Hi!
Is there an easy way to remove the stone out of a peach after peeling?
I want to can halves.

I usually cut the peach in half by running a knife evenly around the peach and pit. Then gently twist the two sides apart and use a grapefruit spoon to remove the pit and residue.

Hi Meagan,
I do the same with the skin on, but after peeling them, it's hard to take the stone out without disturbing the the fruit.
I'm wondering if I'm just better off doing away with the poaching to remove the skin. What do you think?

I haven't done this a whole lot, but I've had decent luck removing the pit the normal way before peeling (run knife around the pit, twist halves) and then peeling each half with a paring knife.

I do it after peeling also. It is easier to make perfect halves if you don't blanch. It's possible to do it after blanching but you need very firm peaches. If you can use a paring knife or great peeler that would be ideal. It takes practice if you're not experienced to get a perfect surface area.

I'll just forego the whole blanching thing. I'm pretty good with a pairing knife. lol

There are two styles of peaches, clingstone and freestone. In clingstone the flesh clings to the stone, while freestone the pit is not attached to the flesh. With a freestone peach you can easily cut it into two halves (think avocado). With a clingstone peach cut the two cheeks off (think mango). Blanching will have no impact.
