I would certainly buy from you, but it happens that I'm travelling to Japan in a few weeks, so I'd like to ask you if there is any shop over there you recommend.

Where are you going in Japan?
I was in Tokyo recently and picked up a couple (3) knives.
Common places in Tokyo are Kappabashi and (the district for all food and restaurant supplies) and Tsukiji (famous for the fish market). In Kappabashi you can check out Kamata (

) and Kamaasa.
In Tsukiji there is Masamoto as well as a few others.

Every time i walk into a knife shop in japan i feel overwhelmed. I recommend that you have a clear idea of what you want (at least think about it) before you do. This includes:
- how much are you willing to pay?
- Do you want carbon steel or stainless steel?
- What type of knife do you want?
- Do you want it ambidextrous or not?
- Are you prepared to do the sharpening yourself? If so, get a stone along the knife that matches the knife you are getting.
add on top of that the potential communication problems.
so do your homework and spend some time reading about Japanese knives so you are prepared the moment you walk into a store.

Call the folks at Epicurean Edge. Or if you're in the area go in. I was in over the weekend and the owner is making a trip down there really soon as well. It might be worth your time to give him a call. Real friendly people.

I did the same trip last year. If you got time try to visit Sakai City, 20 minutes from Osaka. I bought a bunch of knives in Japan, including Masamoto at Tsukiji market but I really felt in love with the knives from Ashi Hamono (

). From Ashi you can custo made and he ships overseas, gorgeous finish, very thin, great steel and good price. Before you go you should visit JKI (
