A few tips, go for 12" as the smallest size (any smaller is too hard to force product through); get a base (you now have a stable base to work on).

I went with Advantech sieves from SoultionsDirect:

Probably overkill, but the Advantech sieves are well regarded and the price wasn't much higher than other brands. I got Brass with Stainless Steel mesh. The brass discolors a bit, but nothing crazy. I wash them immediately after use.
I agree with what others have said, get the 12" diameter. I bought an 8" at first, and the actual difference in application is dramatic. The bottom pan (bowl that the sieves fit into) is great for stability, but if you have a bowl the sieves will fit in snugly, you can use that.
They aren't cheap.
