greetings i've been encountering some issues in this matter,casings tend to burst while poaching /frying ..ive used fresh hog casings and collagen casings ...need some advice on this.

I've seen it happen if the sausages are over stuffed, but the main reason is too much heat.
What are you stuffing in the casings and how (times/temps) are you cooking the sausage?

Most likely a themp/time issue on the poaching/frying and this of course in relation to the type of the filling used.
