Carnitas cube / BBQ

Has anyone tried something like a pulled pork - sous vide or pressure, then mixed with either enchilada or BBQ sauce and an Activa slurry? Or would molding just an outer layer be better, it would make a really neat presentation

Works, kinda like a surimi texture, it breaks apart pretty easily but
you can slice and pan fry, cool crust, really juicy.
Sliced, and then seared.
With some melty steamed swiss on a levain roll, more enchilada sauce.

Cool. I'm interested to see if the Activa will hold through the sauce. Post some pics of the result!

Yeah, that isn't what I asked.
If I already have those and want to transform the shape and texture with Activa rm. It'll look like this, just tried..

I like the Carnitas from Modernist at Home very much (although I think they are not carnitas but cochinita pibil, but that is a different story...). It uses a pressure cooker.
You can follow their recipe for cooking the meat and then mix it with whatever flavour you want. For example, buy ground mole, mix it with pork stock and add to the carnitas at serving point. It would be delicious.
