I am aware that this has been answered in previous posts, but I was hoping you could clarify a few things for me.
In
this post the Miniature needle, heavy duty wire and PTFE tip wire probes are recommended. The needle probe is pretty self-explanatory, but I would like to know why the PTFE tip should be better for candies than the standard heavy duty wire. Is it because it is heavier and therefore sinks into the viscous liquid?
Also, in the
chicken wings recipe the high temp wire probe is used in the oil. However, according to Thermoworks' website this probe should not be immersed in liquids. And if it can be immersed in liquids, why buy the PTFE tip probe at all, since all it seems to do (except for increased weight?) is make the tip water-proof.
So all in all this is leaving me sort of confused. I hope someone can clarify and maybe also suggest any other probes that might be useful.
Also, when using any kind of probe in pots and pans, will readings be off if the probe touches the bottom of the pan? Should it be clipped onto the side of the pan so that it is immersed in the liquid, but not touching the bottom? What about touching the side of the pan?
