i work in a home for disabled, so we have to puree everything for those who cant handle chewing. this morning i was prepping stuff for the lunches and was pureeing beets. usually i reserve the juice from the can and add it back in as needed to puree it but i accidentally dropped the juice losing it. so instead i used the juice from the next thing i was doing: peas. (beets and peas were both canned, btw.)
heres where it got a bit wacky. for some reason, instead of pureeing nicely like it usually does, with the juice from the peas it started foaming up, coming out of the top of the food processor. it made a huge mess (which i cleaned up ofc) and once portioned out it was noticeably lighter than usual from the air which had been incorporated.
so the question is, why did this happen? whats in the juice from the peas that would cause it to foam up like that? its odd, because when i puree peas they dont foam like that.
