I've had this idea for a long time, and when I saw CS's banana juice that was just what I was looking for in regards to banana flavor. The basic concept is this, take a lollipop stick put a cherry on end, dip in LN, then dip in banana juice and then again in LN repeat above 3-4 times. Now to build the ice cream, take a chocolate,vanilla and strawberry ice cream base, dip banana/cherry into a base then LN keep repeating process with all bases until the lollipop is the size of a gum filled blow pop. A cutaway of lollipop would show repeating layers of strawberry,vanilla and chocolate.
For all the people out there looking for liquid nitrogen. Try contacting a bull semen company like Select Sires, they have reps traveling from farm to farm filling tanks, they may be willing to rent a tank to you. Or contact a dairy through your CSA, if they artificial inseminate they could give info regarding tanks.
My question to Chefsteps is...how long do I put lollipops in freezer to warm up before serving? Is liquid nitrogen the same liquid nitrogen regardless if I am freezing lollipops or bull semen? And a question for the general public is...would you buy these lollipops if you saw them in a farmers market and what would you be willin to pay for them?
Any fruit based dessert that benefits from the a-la-mode addition works to make lollipops, bananas foster and apple pie just to name two.
