Wanted to post on an already created thread but I wasn't sure it would be seen. You'd think I'd have 72hr short ribs down as this would be my third time, but my butcher keeps cutting them differently. Now I bought 9 pieces of short ribs. Basically one long short rib cut into quarters. I have three in a bag with oil, using the water displacement method. One of the short ribs slid inside the bag and is resting on another short rib within the same bag. Is this a problem for a 72hr cook? Should I rearrange them so they aren't touching, best as I can. Thanks!
P.S. They were pre-seared.
