Plastic bags and sous vide
Peter_28774
What research, tests or thoughts do people have about plastic residues or BPA-like toxins leaching from the plastic sous vide bags? Does the lower heating temperature reduce this risk or are any reductions simply offset by the longer cooking times?

HDPE (High Density Polyethylene) has been shown to be safe and not leak into foods at SV temperatures. These are the plastics most commonly used in sous vide and needed to be stressed by autoclaves, repeatedly microwaves, and so on before the researchers could detect potential molecules of concern. These do not occur during sous vide cooking. Bottom line is the current evidence suggests it is quite safe (I had to answer this for myself prior to purchase).

This was pretty well covered on the old forum, I'll see if I can't find that post.
