Working up the menu now. I will look forward to seeing what other people are planning and making some adjustments. As it stands:
Fried Oyster with Mignonette Aioli
Salmon Mi Cuit with Squid Ink and Mesclun Salad
Beet Raviolo
Coffee Rubbed Beef Tenderloin (54*) Tacos. Mango and Avocado.
Right now I am still trying to work with the last course, as the "Tacos" don't quite fit for me right now, but I really want to do the coffee rubbed fillet.

maybe a parmesan crisp as the taco rather than a taco shell?

I like that idea. Any ideas on how to "bend" it into shape? Also I will probably sub the mango and avocado out, as that doesn't quite go either. Maybe melted leeks and apples?
I also plan on working Maine Shrimp into this seeing as they are in season here (Boston). I am thinking in between the raviolo and the beef. Perhaps a take on Shrimp and Grits...

As of right now I have a braised leek and goat cheese terrine setting up in the fridge, that is going to be a first course with some nice toast points and a piece of crispy chicken skin.
for the main, I think I may break out the NY strip I have aging. By thursday it will have been in for 5 weeks and it looks and smells pretty awesome. I would pair that with shaved brussel sprouts sauteed in garlic butter with bacon lardon.
Not real big on dessert though so I'm thinking about a sweet cheese course. I have some nice cranberry studded white stilton that may make it's way into either a parfait or maybe mini deconstructed cheesecake.

What I do is put a tablespoon of parm on a microwave safe plate and put it in nuker for like 45 seconds until it gets really bubbly and once you take it out you can shape it how you'd like quickly. For a taco shape I think you could go with wrapping it around a champagne flute or a shot glass or even a rolling pin if it's narrow enough.

I think really thinly sliced apples and fennel would make for a good slaw for the tacos with the coffee notes adding the chocolate/bitter notes.

Chris B — You can bend it into shape around a wooden dowel straight out of the oven. When hot, it will be plenty pliable.

, cook them in the oven on a silpat, then use whatever you want as a mold. I've used these fricos as a "bowl" for salads. I have a recipe somewhere for an herbed crepe basket (similar to your frico idea) with mixed field greens, crispy fried oysters, applewood smoked bacon and aioli that might be nice. Also, Bobby Flay has a great recipe for a coffee and ancho rubbed filet with a nice sauce and tamales as a side. I'm sure you can find recipes online. I've made it several times and everyone loved it! Hope this helps

Thanks to those who offered suggestions, they really helped! The final "menu" was:
1. Fried Oyster, Mignonette Aioli, "Sand".
2. Salmon Mi Cuit, Balsamic Crema, Cyprus Flake Salt, Siena Farms Peppercress
3. Beet Raviolo, Roast Pork Belly, Mascarpone
4. Beef Tenderloin, Melted Leeks, Apple, Parmigiano Fricco

Looks absolutely great. What was your technique on the beet raviolo?

Roasted beet pasta: Roasted beets with olive oil, pureed with an egg, combined with ~150 grams 00 flour.
Regular pasta: 1 egg, 100 grams 00 flour.
Roll out both pastas to medium thickness, and made thin spaghetti out of the beet pasta.
Lay the beet spaghetti on top of the regular past in random patterns and put through the rollers again.
Cut out circles of dough, make a "nest" out of filling (I used mascarpone, ricotta and smoked pimenton)
Put egg yolk in center of "nest".
Lay pasta sheet on top of "nest", seal raviolo and cut.
Boil for ~1 minute in salted water.
