I'm going to stuff them with goat cheese and caramelized onions. The question is the bacon, do i partially pre-cook it, glue it on and SV or glue it on and SV? My concern is while it should be a great insulater for the chicken, will I have to sear it so long it starts to cook the chicken?
If no one has tried this before I will do it both ways and we will see how it works...
