Patrik is spot on! While some things I knew and understood, the majority of it was eye opening. By the way, don't ever think this would be too long, it was the quickest 18 minutes i have experienced in a long time.

I enjoy the well-composed, high production value, tightly edited ChefSteps brand video just as much as the next home cook with ADD. But videos like this feel like you're in an actual classroom learning from an experienced group of instructors. I'd like to see more videos like this as part of your classes.

Go to ChefSteps as it is now for recipes coupled with valuable information about the food.

Go to ChefSteps with this type of content for recipes, info about the food, and info about being a chef.

This type of content would be a game changer, in my humble opinion.

Thanks for the video. Very interesting. Not to be too simplistic, but isn't he just saying "compose a dish made up of components that all go together"? Isn't that what most good dishes are made of? Components that go together?

If you don't have the Manresa cookbook, try to check it out. Kinch talks about building a dish through three elements, plus a dynamic element. I really enjoy it.
